Hilton Manila is kicking off the anticipated 2nd edition of its Four Hands Culinary Series featuring a reimagined buffet experience with global live-cooking kitchens, the global hospitality chain announced in a release.
The continuation of the culinary series, which was revived earlier this year, will be led by the tandem of Chef Mark Santiago, executive sous chef at Hilton Manila, and Chef Pat Mesina, guest executive sous chef at Conrad Manila, to showcase “an exquisite fusion of international and Filipino flavors.”
The limited-time event, dubbed Four Hands Culinary Series – Global Gastronomy, will run from September 15-30, 2023 at the Kusina Sea Kitchens in Hilton Manila.
Chef Mark, who draws from a heritage rooted in Kapampangan and Bulacan cuisines, specializes in iconic dishes like Serkele (Blood stew), Lengua Asado, and Lapu-lapu Dela Reyna by blending tradition with innovation.
Chef Pat, on the other hand, offers specialties like Oxtail Kare-kare, Beef Nilaga Kapampangan style, and Tofu Sisig—heirloom recipes updated with modern ingredients and presentation.
John Lucas, general manager of Hilton Manila, said the hotel’s commitment to excellent guest experiences goes hand in hand with their passion for sustainability.

Following the 2nd edition of the Four Hands Culinary Series, Hilton Manila added that Kusina Sea Kitchens will “continue to captivate guests with an array of eight distinct internationally favored flavors: Indian, Salad, Japanese, Asian, Noodle, Filipino, Western/Carvery, and Dessert. Each kitchen is led by talented chefs, some of whom are esteemed winners from the 2023 Philippine Culinary Cup.”
